It’s been almost 50 years since she opened the doors of her restaurant and Carmen Ramírez Degollado, better known as Titita, continues to cook and serve with zeal and unwavering energy. She is proud of her five children and how they grew up into such good people, and feels equally committed to her team of more than 1,700 employees, whom she has taught to treat ingredients with immense kindness and respect—one of the secrets of her delectable masterpieces.
